Modified bitumen coating, as the name suggests, is effectively a layer of asphalt which is applied to your roof.  They have excellent waterproofing qualities, and their thick\heavy nature allows them to stand up to considerable abuse without allowing the roof to be damaged.  The big drawback is that they're slower to install and very sensitive to water during the curing process.

Acrylic Coating

Acrylic coatings are a particularly popular choice for lightweight sun- and UV-protection.  In a light color, they can be extremely effective at reflecting away 90%+ of the sun's rays, reducing sun damage and lowering interior A/C costs.  However, they are relatively weak and don't resist weather damage as well as other options.  In particular, they are not a good choice for areas with a lot of rain, as standing water can weaken their bond with the roof.

Elastomeric Coating

An elastomeric coating, such as urethane, is often seen as the best-of-both-worlds option.  It's lightweight and can be quite effective in blocking UV, but offers superior resiliency and damage protection in most circumstances, along with better water-proofing.  It's also relatively easy to repair, should damage occur.  However, these are often among the most expensive types of roof coatings available due to the need for specialty materials in the coating liquid.  But in many cases, the long-term benefits still outweigh the higher initial cost.
